Winter Fruit Compote

Serves 8; about 3/4 cup per serving

Serve this versatile warm fruit compote alone, or try it as an accompaniment to meats, as the filling for blintzes or crepes, or over fat-free vanilla ice cream or frozen yogurt.

8 ounces dried apricots (about 1 1/3 cups)

1 cup dried cranberries

6 ounces dried peaches (about 1 cup)

4 ounces pitted prunes (about 2/3 cup)

3 mango tea bags or 1 tablespoon plus 1 1/2 teaspoons loose mango tea in a tea ball

3/4 cup firmly packed light brown sugar

Grated zest and juice of 2 medium oranges (navel preferred)

1/2 cup orange-flavored liqueur or juice of 1 medium orange (navel preferred)

1 cinnamon stick, about 3 inches long

1/4 teaspoon freshly grated or ground nutmeg

1/4 teaspoon minced gingerroot

1/8 teaspoon ground cloves

In a large glass bowl, combine apricots, cranberries, peaches, prunes, and tea bags; cover with lukewarm water. Cover bowl with plastic wrap or lid and let soak overnight.

Drain mixture in a colander, discarding tea bags and liquid. Transfer fruit mixture to a large saucepan and add remaining ingredients. Gently combine with a large rubber scraper so mixture is well blended but fruit remains intact. Bring to a low boil over medium heat. Reduce heat and simmer for 45 to 55 minutes, or until all fruit is soft.

Variation
Go monochromatic and make this a red compote for the holidays. Soak dried cherries or cranberries, dried apples, and dried apricots overnight with your favorite flavored tea (brewed tea or water with tea bags) and 3 to 4 cups (whatever you have left over) juice from freshly cooked beets. The important thing is to cover all the fruit with liquid; use lukewarm water to make up the difference. Soak overnight and drain the next day as directed above.
